Gluten free Chocolate Chip Pumpkin Mini Pound Cakes

From the Kitchen of: Pati’s Recipe
Gluten free Chocolate Chip
Pumpkin
 Mini Pound Cakes



Ingredients
1 package
3
eggs
¾ cup
water
1 cup
canned pumpkin
1 cup
chocolate chips(Enjoy Life dairy –free)
½ tsp.
gluten-free pumpkin pie spice

Directions


1.     Heat oven to 350° F. lightly spray a mini pound cake mold with non-stick spray.
2.     Combine pumpkin, chocolate chips, pumpkin pie spice, eggs and water and mix well. Add Vanilla Cake mix and mix well.
3.     Bake for approximately 30-35 minutes. Cake is done when toothpick inserted in center comes out clean.

The Namaste Foods Gluten free Yellow Cake mix  worked really well
