Gluten Free Banana –Walnut Chocolate Chip Muffins


Gluten Free Banana –Walnut Chocolate Chip Muffins
 When your bananas are just about to turn brown ...
Great time to make a recipe to use them up quickly!
I decided to go the muffin route but you could make banana pancakes, banana bread , throw them in a smoothie!
All these suggestions would be Yummy !!!!
I couldn't decide on adding 
walnuts or dairy free chocolate chips...
So I added them both !!!

Servings: This recipe makes 15 muffins






Ingredients:

    1/2 cup walnuts, chopped
  1/2 cup dairy free chocolate chips
    1 cup bananas, mashed
    1/2 cup honey
    1-1/2 cup Gluten - free flour
    1/3 cup melted coconut oil
    3 whole eggs
    1/2 teaspoon salt
    1/2 teaspoon baking soda 
        1/2 teaspoon Vanilla 


Preheat oven to 350°F.

Chop walnuts into small pieces.
 

















In a mixing bowl, 
mash bananas until creamy,
(1 cup equals about 2 bananas)



Stir in honey,
vanilla & coconut oil.

 Mix  to combine.
Next....



Add gluten- free flour, eggs,baking soda
 and salt in with the bananas mixture. 




Using a hand mixer or whisk, mix thoroughly for 1 minute.




Add walnuts & chocolate chips to the batter
 and don't over stir otherwise you will have a not so moist muffin.
I mix them one at a time ...




Place cupcake liners into muffin tins, or grease liberally , or use a non-stick spray and dust with flour.



 

Fill 15 cupcake forms until almost to the edge of the top.
I'm using an ice cream scooper to make each muffin
 the same amount & size.




Bake for 25 minutes or until lightly browned on top and a toothpick inserted comes out clean.



Let them cool...

Serve  & Enjoy...
I top my muffin with a non- dairy butter spread!

The flavor of the warm bananas with the chocolate chips
 and that lil crunch of the walnut so moist I can't contain myself...ughhhh ...
Lol ;)

I then after I devoured a muffin or two ....
I portion out each muffin in a small freezer bag
 so on a busy morning when I need something quick to eat 
I grab a single muffin, popped in microwave to slightly warm,
then pop one in my mouth...
 me & my tummy 
are satisfied!!!!  
This was a  Great Gluten/Dairy -Free Breakfast treat !
